This honey is crafted from honeydew, produced when Hemiptera insects feed on tree sap from July to September. As they consume the sap, they excrete excess water and sugars as honeydew, which is then collected by bees. Despite being a byproduct for insects, honeydew is rich in minerals and sugars, making it a valuable food source for bees and contributing to the robust, slightly bitter, and lingering aftertaste of this honey.
To preserve its unique flavor, taste, and essential nutrients, the honey is extracted using mechanical centrifugation, followed by a cold decantation process. It is then carefully filtered and packaged, with the processing temperature maintained at approximately 30°C.
